The Minute Mug Cake

Every lazy girl/kitchen tragedy's dream come true!



My stance on dessert has always been,

“If it’s not sweet enough to give you diabetes, then it’s not sweet enough.”

However, due to dietary restrictions imposed by the family physician (Because both my parents ARE diabetic. Go figure!), I had not been able to get my sugar fix in over a month.


I’d been very vocal about my need to satisfy my sweet tooth on social media. The most common response to my constant grumbling was, “Why not just make it yourself?”

The answer to that, ladies and gentlemen, is: I AM ABSOLUTELY USELESS IN THE KITCHEN.


The closest I’ve ever come to baking is adding a few cups of milk to some Betty Crocker brownie mix. I don’t know how to work the oven. I’m not even sure I could tell you where we keep the flour. The only item you can trust me with in this corner of the house is (Thank you, Chef Boyardee!) the microwave.


I was seriously considering just downing a spoonful of sugar when I had the bright idea to run a Pinterest search instead. The search turned up a couple of “simple” recipes but the ingredients and cooking instructions for most of those intimidated me. Desperate as I was—and believe me, I was desperate—I did not want to burn my mom’s kitchen to the ground.


Then I saw it. (Cue the choir of angels!) The Mug Cake.


I’ve had mug cakes before, courtesy of my fabulous cousin Tring of The Pink Box. I’ve even tried making some. However, when my last attempt ended with me wiping batter off the microwave top (I am not exaggerating how much of a disaster I am in this space!), I pretty much gave up on the project.


This time around, the need for cake outweighed the fear of the clean-up and thank God for that! I’ve been having mug cakes for dessert all week.


The recipe I tried was originally posted by Julie of Table for Two.


(BTW, the list of ingredients does include flour so… spoiler alert! I managed to find some!)




Ingredients

1/4 cup + 2 tbsp. All-purpose flour

2 tbsp. Granulated sugar

1/4 tsp. Baking powder

1/8 tsp. Salt

1/4 cup + 2 tbsp. Milk

1 tbsp. Vanilla extract

2 tbsp. Melted Butter

I added 2 tbsp. of Strawberry Nesquick to mine, but you can add chocolate chips, crushed Oreos, cocoa powder, cinnamon, berries, etc. Whatever suits your taste.





As to cooking instructions, you basically put all of the ingredients—the dry before the wet—into your mug and whisk. Then you shove the mug into the microwave for 2 minutes. It comes out fluffy and moist. And all at the push of a button!



I’m glad I decided to give mug cakes another go and I would recommend them to every lazy girl/kitchen tragedy out there.
